Clear Mushroom Soup

Ingredients

1 tablespoon oil (sesame oil, canola oil or peanut oil)
1 onion, diced
1 carrot, peeled and chopped
4 cloves garlic, minced
3 inches fresh ginger, peeled and chopped
12 cups broth (vegetable, chicken, or beef)
4 cups water
mushrooms and green onion

Instructions

Sear the carrots, ginger, onion, and garlic in a large saucepan.
Add broth and bring to a simmer for 1 hour.
Use a slotted spoon to remove vegetables.
Serve with sliced mushrooms and green onion.
Garnish with fresh microgreens and enjoy.

Sauteed Mushrooms
Clean the mushrooms and slice them.
Sautee the mushrooms in olive oil for 2 minutes.
Add roughly chopped fresh thyme and oregano and continue to cook, about 4 to 5 minutes.
When the liquid is cooked out, turn off the heat and stir in fresh lemon juice.
Garnish with fresh microgreens and enjoy.
